The Brief

Recruit a Head Chef to run a large site within the education sector. To provide the pupils with quality restaurant and healthy offers, serving a variety of high street style food products across a lunch and dinner service.  The ideal Head Chef will be expected to maximising profit and managing all of the kitchen / back of house functions. The Head Chef will also be responsible for a large team of 12.

The client the above brief was for is a very well-respected food service company that has established itself to be one of the main contract catering companies across the UK.  They have been established for 15 years and have grown steadily over this time. They are very passionate about what they do which is to provide freshly prepared, nutritious food exclusively to independent schools and colleges. They pride their selves on getting to know those they feed and becoming part of the school community. They have a fantastic reputation for valuing and investing in their people.

The Role Requirements

For this Head Chef role we were seeking someone with a proven track record of taking responsibility for all areas which included the staff restaurant, café and coffee shop, hospitality, functions and events.

The Head aChef needs to be more than just a chef as they had to have a good head for finances and stock control, as well as implementing and monitoring best practice and ensuring that the right procedures are followed.

The Head Chef also needed to be strong with regard to menu planning on a weekly basis.  The Chef would need to have the knowledge of the high street trends and who is able to develop those menu items to work well within a contract catering environment.

The key attributes we were tasked with finding in the ideal Head Chef were:

  • An innovative foodie who could think on their feet
  • A chef with ideally experience working from within contract catering or modern restaurants
  • A desire to be up to date with current food trends and have a desire to learn new dishes
  • Up to date knowledge of Food Health & Safety
  • A chef who had direct experience of creating and working within set budgets
  • Someone with a keen eye for detail with regard to food presentation skills
  • Someone with comprehensive experience of costing and planning menus accurately
